Sadly I do not have a recipe or methodology for making fruit wines, as I have never attempted such before! I'm sure there's advice out there somewhere about it. Enjoy!
I have a great book called Practical Self-Sufficiency which has a whole section on making fruit wines. I'm going to have a crack at elderflower champagne too, since my elder bush is producing masses of beautiful flowers.
